“Research infrastructures for the development of innovative olive and vine products in thePrefecture of the N. Aegean – RI-Food-Aegean’’
The purpose of the specific program is the genetic identification and chemical characterization of the olive and grape varieties, as well as the study of the effect of the microclimate on the produced quality of these products. Apart from these, however, an attempt is being made for the first time to utilize the waste resulting from olive oil production and oenology through the development of a pilot solar distillation unit at the Environmental Laboratory of the University of the Aegean.
The benefits derived from this program are multiple. Initially, due to the combination of molecular and chemical characterization, the genetic identity, the chemical profile as well as the quality of the local olive and grapevine products of the North Aegean region are documented. Also, highlighting the unique quality of these products implies an increase in the added value of their competitiveness and attractiveness both in the Greek and international markets. At the same time, strategic knowledge is provided for the environmental management of waste as well as for its utilization in order to produce new innovative products. Finally, those employed in the primary sector are informed about how to promote their local products, about the production of new innovative products and about how to reduce the environmental pressure caused by their production.

- Standardization and promotion of local products, so that they become known domestically and internationally.
- Utilization of the industrial waste of these products with modern techniques.
- Utilization of distillate waste in cosmetic and pharmaceutical industries
