Sub Project 2
- Implementation of the research infrastructure for the genetic identification of olive and grape varieties and the chemical characterization of their products in the North Aegean Region
-Operation of the equipment for the genetic identification of olive and grape varieties and the chemical characterization of their products in the North Aegean Region
- The following samplings were carried out:
- For genetic identification and chemical characterization, samples of olive and vine leaves as well as olive fruits were collected
- Sampling of olive fruit samples at 4 different stages of development
- Monthly sampling over a year to investigate the effect of microclimate on chemical composition
- Sampling for the phenotypic characterization of Lesvos olive varieties
- Genetic identification was performed on grapevine leaf samples using 10 microsatellite markers and on olive leaf samples with 8 microsatellite markers
- Chemical characterization was performed on vine and olive leaf samples as well as olive fruit
- Development and validation of methodologies for the chemical characterization of samples
- Calculation of bioactive compound
- Study of the bioactive compound of olive fruits in 4 different stages of fruit development
- Study of the effect of microclimate on the bioactive content of olive and olive leaf samples

Implementation of the research infrastructure for the utilization of olive and grape by-products/residues of the N. Aegean Region -Operation of the equipment for the processing and utilization of olive and grape by-products/residues of the N. Aegean Region.
- Correlation of the produced quality of the products with the microclimate of each region. Recording of measurements from the two meteorological stations
- Treatment of waste from olive mills and wineries
- Production of spirits with a high content of polyphenols, with a strong antioxidant effect
